The Public Bake House

A German Tradition

The bake house in DachtelI don't know about the rest of Germany, but in the area of Stuttgart most of the villages have a public bake house (Bäckhaus). The bake house is rented to citizens and clubs so they can make delicious breads and cakes. They seem to be very popular!

Barbara joined the Tea Group in celebrating the tradition. This narrative is from her viewpoint.

Frau MohrA woman, Frau Ruth Mohr, in Dachtel hosted about 10 of us in her tiny kitchen. She warmed us with a glass of homemade schnapps on a cold March morning. With her homemade butter, eggs from her chickens and home-ground flour, we were taught how to measure and mix the ingredients. Two women worked together kneading and mixing according to our mentor's orders.

Parading through the village to the Bake HouseOur goal was to make farm bread, onion cake, rolls, and other similar items. Everything was prepared in the kitchen, then we packed up and paraded down the hill to the community bake house. Frau Mohr had previously collected kindling for the fire.

Baking in the ovenShe built a fire in the brick oven. After the fire burned out, we cleaned out the ashes which left the oven at perfect temperature for our baking.

The results were fabulous! We divided everything up among us and feasted on bread for the week following our adventure.
